Why does drinking cold milk alleviate the burning pain caused by eating highly spiced chili pepper dishes?
I ate a hot pepper and my entire mouth and throat feel on fire. Why does standard tap water fail to clear the burning sensation while a single gulp of milk stops it instantly?

Chili peppers contain a volatile hydrophobic chemical compound called capsaicin which binds tightly to pain receptors in your mouth. Water cannot dissolve capsaicin because it is an oil-based compound. Milk contains a specialized fat-loving protein called casein that acts like a detergent breaking the chemical capsaicin bonds and washing it away safely.
