Why does fresh hot coffee taste incredibly bitter if you brew it using boiling water?

I bought an expensive bag of organic coffee beans but when I brew it using boiling water direct from my kettle, the drink tastes burnt and sour. What temperature is ideal?

Boiling water (100°C) is too hot for coffee extraction; it over-extracts organic compounds, burning delicate oils and drawing out bitter acids. The ideal brewing temperature is 93°C.
